Joined up mid year this year but got distracted by too much mead making. Second the Amontillado. I also doubt that the sherry would stay in any decanter long enough to oxidize beyond being drinkable. At least not if I was upstairs...or downstairs for that matter. As a good employee, I would make sure the lords weren't drinking bad sherry

I've always thought that corks let some (relative term) air through.

In the states this is done with cider and called "apple jack." That's not beer, it's "barley jack". That kind of freezing leaves all the impurities behind as it takes out more and more water. Must taste like the bottom of a fermenter.
