Had a welcome day off today and popped into a local Lidl-Ck's Quinta dos Canais priced at £19.99 but registering at the till at £9.99. White port of the not so expensive variety makes a more than decent summer drink with the addition of ice and a mixer, say tonic, chuck in some mint and fruit/cucumber. Fizzy water and Ginger and/or Elderflower cordials could also work well. Given these options, and the wine on its own tastes good, ...

Croft or Taylor's would be very welcome underwater, although perhaps not the best match with fresh scallops. Pre-decant into Camel Back or empty Calypso Sun pouch - not pop n pour or would get very messy.
