Re: Port Pie with Stilton and chilli

Freudian, intentional, or none of the above: was this a slip or did you really have a "Port" Pie? I was there. I can reassure you that it was not a "Port" Pie, it was an excellent Pork Pie adulterated with some sort of sludge in place of the usual delicious pastry topping. I rem...

Sadly I will not be able to join you, but I note that in the original experiment the only valid comparison between the first and second groups is not swished and swished, both through new muslin. I would strongly discourage swishing.

Re: Filtration

I use a stainless steel coffee filter to very good effect, but it does let through some extremely fine particles in younger Ports. For mature Vintage Port, or any mature Port that throws a crust, my very strong preference is good storage, minimal disturbance and freehand decanting under good light. ...

Having discussed climatic conditions and the effect on the harvest with a number of Port producers every year for almost two decades I suspect that 2022 will be generally described as "a difficult year where we made some very nice wines" :D :990066:

Re: Decanting method experimentation

Following a reference in a recent post on filtration , and looking back at the testing and conclusions reach in 2014/15, I felt a postscript would be worthwhile to add notes from experiences gained over subsequent years, and particularly since I no longer use filter paper for decanting, as explaine...

That is a very interesting post, Jacob. During my career as a civil servant in the 1990's I was involved in a consultancy project to help with the re-establishment of a land register in Georgia to allow citizens to reclaim land and property that had been seized by the Soviet Union. We hosted a deleg...

Re: Filtration

I have been using one of these for about three years. It is excellent. I have a Bodum filter coffee maker which has one of those in a matching jug which is excellent for this sort of thing, because of the very large capacity in the filter. If I didn’t like my proper Port decanters as much, I’d prob...

Welcome to :tpf: and thank you for coming here for advice, which our members are always happy to share. 2021 is unlikely to be an outstanding year for Vintage Port so I would suggest the Port Bond options are not the best option as you might end up spending more money than you need to for the qualit...

ThePortForum.com has been rather slow for me for a couple of days. I've rebooted my computer just because, but it's only TPF and not any other sites. It could possibly be something crossing the Atlantic, too, but thought I'd post in case a reboot of TPF is warranted. Perhaps some of the UK Internet...
