Christopher Doty - reluctant man of science

Post by Chris Doty »

As science has never been sexier, I thought I’d try a hand.

Since purchasing more than I could afford upon their release from gman exclusive us importer, I have been storing too many 2011quevedo at nuclear conditions in the basement of my family’s ancestral Park Avenue abode.

One bottle was cooked for two weeks at 80f + temp and then moved into 54f degree wine refrigerator in the same basement for the past 7+ years.

The second bottle open has spent all 7+ years exposed to the worst combination of heat , noise, vibration, etc

Both bottles are definitionally flawed, but the corks and bottles are flawless, dark and viscous for days and the wines have all the same sugar and alcohol they were endowed with at birth.

Served in most restaurants, particularly to people who’ve already had a few, this would not be sent back.

It has zero nose. Not even alcohol, and certainly not cabbage, wet cardboard, trash, nail polish, poo, or other signs of spoilage.

Wine is smooth and goes down without any appearance of alcohol, much less 20pct abv.

Strangely, I can see this being an ideal port for many casual drinkers. Having had the genuine article Enough to smell the difference from its counterfeit, this would be DNPIM, were but, for Science.

Wine is a living thing . Most wines die happy in your gullet. This wine went the way of my wire walking rainbow wife Joan.

You’re most welcome.

I might add to clarify that 99pct of my Quevedo 2011 and 100pct of my 375 and 6l are being stored professionally at enormous expense

That zero nose is intriguing.

12 hrs later the wines have improved.

A glass bounces when it shatters off the floor.

If someone said “black fruit” on the nose...:

I would be sympathetic. It is not fruit. It is vestige of fruit. But round and warm and not wholly unattractive or in any way off putting

The finish has a similar quality. It would be considered pleasurable to a great many. Not to this individual

As a rmos I can say

2002 vintage was a better year for chartogne taillet. Drink your dom but do not count it out. In 35 plus she will sing with new pipes 🎶
