2007 Graham

Uncorked 2300 night before decanted at 0730 day of consumption. A sniff around 1445 shows a wine much more focused and clear from the opulent and elegant but unsure liquid on first uncorking. A true lesson in sitting with, ruminating and poring over a bottle of vintage port like a fine Burgundy. Three distinct stages: the fluffy un-clarified wrong-footedness of just-released adolescence; the polished and neatened but still disjointed mid stage; then cascading enveloping magic. Only at the final stage was the Grahams pedigree noticeably felt, the wine being so fine boned and tethered. Such a Burgundian (really), delicately considered wine. Showing the truly floral side of Graham's, not drowned by berries. So lucky to catch those fine aromatic strands, while still youthful and full-blown Graham.
