how does a wine have a 1795 vintage
but was established in 1870?

Perhaps the company bought and blended old casks?

It's usually pretty much as Julian suggests - company X is founded in 1890 but bases itself on wines that it has been able to buy from individual producers or other firms. A 1795 vintage will be from some old barrels which were produced before the company was founded but were bought and bottled by the company, who put their name on the wine because they thought it would add to their reputation.
