2004 Billecart-Salmon

A light and precise wine. I am always astounded by Champagne's keeping qualities, at ten years old it is scarcely past the first flush of youth, decidedly yeasty rather than bready on the nose which I associate with a mature wine. It still has some hardness about the palate with some lemon, again suggestive of youth. Fine mousse, tasting of gardens, hedgerow and rainwater, without the heaviness of flavour I associate with English sparklers. It is mostly Pinot, which is a bit of a surprise given its lightness, without the winey flavour I associate with the likes of Bollinger and Krug. An absolute delight to share with my best beloved who adored it.

The score; 'In the Kamigata area, they have a sort of tiered lunchbox they use for a single day when flower viewing. Upon returning, they throw them away, trampling them underfoot. The end is important in all things.' Hagakure.
