Brought from Berlin and drunk at the Graacher Tor Anno 1640 restaurant (I think) on the 12th August 2014. The note is written across several pages in a rather odd order and this may account for some apparent disjointedness in what follows.
D+½ Big chunky nose full of cherries and plums (AW77: raspberry); blocky, tannic and acidic. With work, some barnyard notes are evident, but it's very twiggy.
In the mouth, at this stage, it's quite disjointed. Light entry, acid and a hint of barnyard mid-palate, sharpness and acid in the finish. Very dry and tannic, quite large. The acid lingers for a long time.
D+1 Much more integrated. The chewy fruit has floated away somewhat, the barnyard has come forward and the acid has softened. Much better drinking.
D+1½ More acid. The fruit is still there, up front and throughout, but much quieter. The barnyard has also receded. Perhaps this is fading? Maybe it lacks the curl in the tail that makes a good glass so appealing; it has richness, it is short or maybe a little clean in the finish, when you'd like it to inveigle you to spend an extra half an hour.
D+2 With a fresh glass, this is revived, big again, the fruit very present at the front, the tannins definite once more. It's lovely and juicy, the barnyard is a will o' the wisp, the tannins are a loving clasp rather than a death grip. A lovely, satisfying tang on the finish.

Re: 2000 Château de Chasse-Spleen
My note says that we drunk this wine at the "Anno 1640" restaurant in Bernkasted Kues.
The first glass was tasted after after one hour:
quite dark, still smells of dark fruits (some currant, raspberry and cherry), but there is also some forest ground and in the background a tiny bit of barnyard, light to medium body, quite a lot of acidity, quite dry, too, sweet cherry in the mouth plus quite tannic, in the aftertaste it's quite acidic and tannic, the lenght is not that long (15 seconds)
At D +1,5 h: this really has improved, the tannins are rounder, the fruit is still there, but it's more subdued now, the barnyard is more pronounced now, it is more full bodied now and has a longer finish
